Smoked white pepper has a bright, earthy flavour. It’s milder than black pepper and complements dishes with seafood and poultry.
Mill & Mortar’s white pepper is grown organically in Sri Lanka. The berries are dried in the sun and then smoked over beech and pine wood shavings. Juniper is added to the wood mix for additional flavour.
The pepper’s subtle smokiness works well in creamy soups and sauces. It’s particularly useful for Asian recipes and potato dishes. Add a generous pinch to mashed potato or pommes Boulangère.
White pepper is also used in rubs and marinades. Mix it with soy sauce and shaoxing wine to marinate chicken before stir frying. The mild, peppery taste works well in broth-based soups like laksa and tom yum.
Smoked white pepper is a versatile addition to your spice rack. Sprinkle it over scrambled eggs, buttered greens and Danish-style open sandwiches.
