Nigella seeds have a peppery, slightly bitter flavour. They’re sometimes called black cumin or black onion seeds, despite not being related to either. They are a popular ingredient in Indian, North African and Middle Eastern cuisine.
In India, nigella seeds are added to curries and sprinkled over naan. You will find them in many plant based dishes, such as tarka dahl and aloo gobi. Their smoky, onion-like taste complements root vegetables and butternut squash.
Dry fry the seeds to intensify their flavour and aroma. You can sprinkle them over flatbreads, pilafs and cabbage salad. They’re a great alternative to poppy and sesame seeds. Try scattering them over pretzels or bagels before baking.
Add organic nigella seeds to kachumbar, an Indian salad. It’s a delicious accompaniment to curries and tandoori chicken.
Store in an airtight container in a dark, dry place.
