You’ll find lots of uses for the De Buyer stainless-steel tray with oblique edges. The robust tray is a useful support for silicone moulds or base for tart rings when cold-forming. Suitable for blast chillers as well as conventional freezers, it's a great option for busy kitchens where results are needed fast.
The tray is polished to a high-end mirror finish, so as well as using it for preparation you can use it to display pastries and canapes, too.
The oblique edges are easy to hold onto. It also allows for easy removal of baking sheets – simply slide off the tray onto another work surface.
Dishwasher safe. To maintain and restore mirror-finish, polish occasionally with stainless-steel polishing paste.
