A classic Chinese flavouring, sesame oil - the oil derived from sesame seeds - brings a distinctive nutty flavour to dishes from braises to stir-fries and noodles dishes. Brush it over poached chicken and add a touch to rice cooked in chicken stock for a classic Hainanese chicken rice.
