For a satisfying summer salad, mix drained, rinsed haricot beans with diced tomatoes, olive oil, lemon juice, black olives and roughly chopped mint and parsley. The alubias haricot beans are grown in Ávila‎ near Madrid. Then they’re taken to Navarre at the foot of the Pyrenees where El Navarrico cook them to perfection before packing the beans in jars.
