Green fennel seeds have a fresh aniseed flavour. Dry frying them helps to bring out their sweetness. Pair fennel seeds with other spices in rubs, sauces and marinades.
The fragrant seeds can be used whole or ground to a fine powder. You can add them to focaccia dough and spice blends for Indian curries. They’re often used in pickling, adding liquorice notes to sauerkraut and pickled cucumber.
Fennel seeds are often added to rubs for joints of pork. Pair them with garlic, salt and black pepper to flavour pork belly and shoulder. The seeds infuse the meat as it roasts, giving the meat a herby, aniseed taste.
Fennel seeds also work well with fish and seafood. Try adding them to fish soups and marinades for bream and bass.
