To bring out their flavour and aroma, dry fry the seeds before use. They add depth and warmth to curries like lamb rogan josh. Sizzle the seeds in oil or ghee with other spices to temper tarka dahl. Or, grind them to add to rubs and marinades.
Coriander seeds are also used in Middle Eastern recipes. They’re often paired with cumin to flavour grilled meat and falafel.
