Halved bamboo shoots have a distinctive crunch and a refreshing light nutty flavour. Drain, rinse and slice these halves then use them to add texture to stir-fries, braised Chinese dishes and Thai curries. Fresh bamboo shoots are fiddly to prepare, so a tin of pre-peeled and cleaned bamboo shoots is a very useful store cupboard ingredient.
