Fregola is pieces of rolled and toasted pasta dough. Toasting the dough gives fregola a roasted, nutty flavour. It is often found in dishes with seafood and shellfish. Fregola also lends itself well to hearty, rustic dishes with beans, potatoes, prawns or chicken in broth.
Fregola cooks in boiling water in 6-8 minutes.
