The olives are harvested at peak freshness in early October. They are sourced from the Los Robledos estate in Jaén, Andalucía. The climate and mineral-rich soil provide ideal growing conditions for Picual olives.
The olives are harvested at night and processed soon after to preserve their quality. The result is a green-gold oil with a grassy, full-bodied flavour. There are notes of artichoke and green tomato, followed by a peppery finish.
